Cherry Ripe Overnight Oats

I have some Cherries left over from Christmas and thought I’d throw together some overnight oats. I generally do my overnight oats with a mixture of non-dairy milk (I use a almond/coconut blend normally) and coconut yogurt, but I also had some coconut milk left over from baking and wanted to make this super coconutty. Technically this is probably one serve but I can’t eat this much in the morning, so I usually spread it across 2 mornings. Hope you enjoy!

Ingredients
½ cup rolled oats (I use Gloriously Free Oats- In Australia they can’t call oats ‘Gluten Free’ but these are certified Gluten Free in many other countries and I have no issues with them. You can buy them in some health food shops or here https://gfoats.com.au )
¾ cup coconut milk (canned- shaken up first)
½ cup pitted and quartered cherries
1 TBS Cocao or Cocoa powder (Cocao is best but Cocoa will do if it’s what you have on hand)
1 TBS shredded Coconut
1 TBS Maple Syrup
1 tsp vanilla

Mix everything together in a jar or container. It’s easy if it’s a container you can pop the lid on and just shake it all together to mix. Leaving the lid on place oats in the fridge overnight.
In the morning top with extra cherries, coconut and cocoa nibs if you wish. Eat! Yummy!
